Quinoa Orange Pilaf

Countries of origin: Peru, Bolivia Quinoa - the mother of all grains, high in protein, high in calcium, gluten free. This recipe is a substitute for rice or pasta in a curry.
Quinoa was a staple food of the Inca civilisation, so Bolivia and Peru are the true origin of this excellent seed.

Ingredients

200 gms red or ordinary FAIRTRADE quinoa
600 ml FAIRTRADE Orange Juice
100 gms FAIRTRADE Raisins
zest of 1 FAIRTRADE lemon
15 ml Equal Exchange Fair Trade Palestinian olive oil
FAIRTRADE Sources
Dried Apricots
Lemons
Raisins
Fruit Juice
Quinoa
Olive Oil

Method

Heat the olive oil and toast the quinoa with the lemon zest until the ingredients heat up and become aromatic.
Stir in the dried fruit.
Stir in the orange juice and bring up to the boil.
Reduce the heat and simmer uncovered for 20 minutes or until the liquid is absorbed.

To serve

Turn into a serving dish and serve hot or chilled.

Variation

Dried fruit can be sultanas.
Dried fruit could be apricots, but these need to be soaked overnight in a little water prior to use.
FAIRTRADE Tropical Fruit Juice could be substituted for the Orange Juice to make a breakfast dish.
