Quinoa Fruit Salad

Countries of origin: Peru, Bolivia Quinoa, the mother of grains and sustenance of the Incas is here combined with delicious fresh fruit to make an amazing nutritious, delicious, attractive meal.

Ingredients

200 gms FAIRTRADE red quinoa
400 ml FAIRTRADE orange juice
50 gm FAIRTRADE raisins or sultanas
50 gm Fair Trade cashew nuts
1 1cm slice FAIRTRADE pineapple
2 FAIRTRADE bananas
2 FAIRTRADE oranges
30 ml chopped mint leaves
2 spring onions
Equal Exchange Fair Trade Palestinian olive oil
salt and FAIRTRADE black pepper to taste

Raisins
Sultanas
Fresh Fruit
Apples
Bananas
Grapes
Lemons
Mango
Oranges
Pineapple
Wine
Brazil Nuts
Cashew Nuts

Method

Put the orange juice in a pan and set to heat to the boil.
Rinse the quinoa for a couple of minutes under running cold water.
Add the quinoa to the boiling juice, return to the boil, reduce to a simmer.
Simmer for 20 minutes or until the juice is almost all absorbed.
Remove from the heat and allow to cool.
Remove the outer and inner from the pineapple ring and cut the rest into small portions.
Peel and chop the bananas.
Peel, de-pith and slice the oranges.
Trim the spring onions (top and tail) and slice fine.
Combine the dried fruit, fresh fruit, nuts, leaves and seasoning in a bowl, and add the cooled red quinoa.

Variation

Vary the fresh fruit according to what is available.
Vary the dried fruit according to what you prefer.

To serve

Refridgerate before serving.
Serve with dobs of cream.
Open a bottle of FAIRTRADE white wine as well (or a red). Relax. Put some nice music on the hi-fi. Be grateful for small mercies and the luxury of a western lifestyle.
