Poached Chicken

Serves 4, and the left-overs feed Tequila-the-cat as well.
This was ascribed to England because Nigel Slater enthused about the economics and flavours. But I suspect this is a universal recipe.

Ingredients

1 chicken 2.5 kilo.
A few chicken wings
6 shallots
2 leeks
2 sticks celery
2 tomatoes
10 FAIRTRADE whole black peppercorns
4 Fair Trade bay leaves
A few sprigs of fresh parsley

Herbs and Spices
Wine

Method

Pop the chicken in a large skillet and arrange the chicken wings around the pan.
Top and tail and chop the leeks into 3 cm pieces.
Top tail and peel the shallots.
Add the vegetables and aromatics
Cover with water and bring to the boil.
Skim off any scum that forms
Simmer very gently for 75 minutes
Let the chicken rest covered with foil for a few minutes while you make the gravy.

To serve

First meal:
Serve slices from the breast with boiled or roast potatoes and green veg or carrots.
[Note: If serving with roast potatoes, use the oven at Gas Mark 6 or 7 and put the potatoes at the top].
Second meal:
Chunks of chicken in Nun's Salad, or Nasi Goreng, etc.
