Quinoa is both nutritious and flexible. Here it is the basis of an interesting dessert.
"New Internationalist" magazine is acknowledged as the inspiration behind this Bolivian recipe.

Ingredients

200 gm FAIRTRADE quinoa
450 ml water
60 ml FAIRTRADE honey
FAIRTRADE Sources
Raisins
Sultanas
Honey
Quinoa
Sugar

Method

Set the water in a pan to heat to boiling.
Meanwhile rinse the quinoa in running cold water for 2 minutes or so.
Then lightly toast the quinoa in a non-stick pan until the grains begin to burst. (A minute or two only).
Once the water is boiling add the toasted quinoa and simmer for about 15 minutes or until the moisture is taken up.
Stir in the honey.

To serve

Serve hot.

Variation

FAIRTRADE sugar can be used in place of the honey.
A handful of Fair Trade raisins can be added on high days and holidays.
