Method
Preparation
De skin the onion, and chop very fine, or grate.
Wash the lettuce leaves.
Juice the lemon.
Cooking
Boil the potatoes in their skins and allow to cool.
Hard boil the eggs (10 to 12 minutes) and cool them in cold water. S
hell the eggs and separate the yolks.
Place the egg yolks, in a bowl with the grated cheese, chilli powder,
a little salt and pepper and mash together with the back of a (wooden) spoon.
Gradually beat in the Brazil Nut oil, the condensed milk and the lemon juice.
Check the seasoning and adjust as necessary.
Mix in the grated onion.
Assembly
Place the lettuce leaves around the edge of a serving dish and put the potatoes in the dish.
Pour over the sauce.
Garnish with olives.
To serve
Serve cold.
Variation
Vary the hot spice to taste.
