West African Ghanaian beef stew with spinach and okra.
Serves 4 portions.

Ingredients

1 kg stewing beef
2 medium cooking oniond
4 cloves garlick
500 gm fresh spinach
250 gm okra
1 litre beef stock
1 FAIRTRADE lemon
5 ml chilli powder
FAIRTRADE Sources
FAIRTRADE Fresh fruit and veg
Lemons
Chili peppers
Rice

Method

Preparation


Trim any unwanted pieces of fat from the meat and wash in cold water.
Skin and chop the onions.
Skin and chop the garlick.
Trim stems and stalks from the spinach and okra.
Juice the lemon.

Cooking


Put the meat onion and garlic in a pot, add the stock, bring up to boiling, cover and simmer for 2 hours.
Add the spinach and okra and cook for 5 minutes over medium heat.
Add chili powder, salt, pepper and the lemon juice.
Return to a simmer and simmer for 25 minutes.

To serve

Serve hot over rice.

Variation

Add a favourite vegetable to the pot with the lemon juice.
