Orange Consomme

Country of origin: Channel Islands A fresh light soup, hot or cold.

Ingredients

1.5 Litres clear chicken stock
12 FAIRTRADE oranges
10 FAIRTRADE cloves
10 whole coriander seeds
fresh parsley
30 ml FAIRTRADE runny honey
50 ml FAIRTRADE white wine
FAIRTRADE Sources

Oranges
Wine
Fruit Juice
Honey
Herbs and Spices

Method

Preparation

Juice 10 of the oranges.
Skin and de-pith the other oranges and slice into semi-cricles.

Cooking

Combine the orange juice and the chicken stock in a saucepan and add the cloves and coriander seeds.
Gently heat the liquid to a simmer and stir in the wine and honey.
Simmer for 5 minutes.

To serve

Strain the soup into bowls and decorate with the orange slices and a sprig of parsley.

Variation

Serve chilled on a hot summer day.
Substitute a carton of FAIRTRADE orange juice if you can't get the oranges.
A squeeze of FAIRTRADE lemon juice might also be appreciated.
