Onion Salad

A delightful contrast sweet and sharp flavours in this recipe from Andorra .

Ingredients

2 medium sized red onions
1 clove garlic
16 black olives
Dressing
20 ml FAIRTRADE Honey
20 ml Equal Exchange Fair Trade Palestinian olive oil
to taste salt
to taste FAIRTRADE freshly ground black pepper
20 ml red wine vinegar
FAIRTRADE Sources
Honey
Brazil Nut Oil
Olive Oil
Herbs and Spices

Method

Top, tail, skin and finely chop the onions.
Mix the honey, oil, vinegar and seasoning together in a small bowl, and then pour over the onions.
Allow to marinate for minimum 1 hour.
Cut the garlic in half and run the moist exposed part around the inside of the salad bowl to give that elusive hint of garlic.
Add olives.
Chill before serving.

Variation

FAIRTRADE Honey comes in different flavours. Experiment.
Substitute FAIRTRADE Brazil nut oil for the olive oil.

Serve: as an interesting side dish.
