Method
Top, tail, skin and finely chop the onions.
Mix the honey, oil, vinegar and seasoning together in a small bowl, and then pour over the onions.
Allow to marinate for minimum 1 hour.
Cut the garlic in half and run the moist exposed part around the inside of the salad bowl to give that elusive hint of garlic.
Add olives.
Chill before serving.
Variation
FAIRTRADE Honey comes in different flavours. Experiment.
Substitute FAIRTRADE Brazil nut oil for the olive oil.
Serve: as an interesting side dish.
