Nutty Muffins

This dish is ascribed to Bolivia.

Ingredients

150 gm self raising flour
80 gm FAIRTRADE raw cane sugar
5 ml baking powder
5 ml baking soda
100 gm FAIRTRADE brazil nuts
100 gm Darkly Divine FAIRTRADE Chocolate
2 hens eggs
100gm butter or margarine
200 ml milk
FAIRTRADE Sources
Fresh food
Walnuts
Chocolate
Sugar
Sultanas

Method

Preparation

Pre-heat the oven to Gas Mark 6 (200 deg C). Chop the nuts fairly small.
Grate the chocolate coarsely.
Sieve together the dry ingredients and add the nuts and chocolate.

Cooking

In a separate bowl melt the butter or margarine and beat in the eggs and milk.
Add the liquid ingredients to the dry ingredients and mix very quickly. (A few lumps are OK).
Pour into muffin cases (only two-thirds full).
Bake in the oven for 20 to 25 minutes.

To serve

Allow to cool before serving.

Variations

You could sneak in a handful of FAIRTRADE Sultanas.
