Nuns' Salad

Nuns' Salad If you buy a ready cooked chicken, then no cooking skill is necessary to produce this very popular, filling, attractive salad.
This is an English party dish, serves lots.

Ingredients

500 gm cooked chicken, cubed
12 spring onions, white part only, chopped
500 gm FAIRTRADE potatoes, peeled, cooked and diced
50 gm FAIRTRADE raisins
225 gm large black seedless FAIRTRADE grapes, halved
50 gm large black olives, halved and stoned
2.5 ml salt
Large pinch freshly ground FAIRTRADE black pepper
1 large FAIRTRADE eating apple peeled, cored and diced
175 ml mayonnaise

Grapes
Raisins
Sultanas
Herbs and Spices

Method

Combine the chicken, spring onions, potatoes, raisins, half the grapes, the olives, salt, pepper and apple in a large salad bowl. Pour over the mayonnaise and toss gently but thoroughly.
Arrange the remaining grape halves decoratively over the top.

Variation

None really, but within reason the quantities of ingredients can be varied. No-one has ever complained about extra chicken, or generosity with the raisins or grapes, and this is a good filling salad, and keeps for a day or two if kept covered.

To serve

Chill for 30 minutes before serving.
