Marmalade Cake

A simple English cake with the tang of marmalade.

Ingredients

125 gms plain flour
125 gms FAIRTRADE Caster Sugar
125 gms butter
2 hens eggs
2 heaped tablespoons FAIRTRADE Marmalade
3 ml baking powder
generous pinch salt

Sugar

Method

Cream together the butter and the sugar and add the beaten eggs and marmalade.
Fold in the flour and add the baking powder and salt.
Put in a greased cake tin and bake in the middle of the oven at 375 def F (Gas Mk 5, 190 deg C) for about 1 hour.

To serve

Let it cool first.
