Rice a la Malta

Country of origin: Sweden Rice with pineapple pieces, oranges slices and whipped cream. This recipe will stand plenty of juicy fruit.

Ingredients

300 gm FAIRTRADE white rice
200 ml whipping cream
1 FAIRTRADE lemon
30 ml FAIRTRADE Raw Cane Sugar
3 to 6 FAIRTRADE oranges
4 or 5 slices of FAIRTRADE pineapple

Method

Preparation


Wash the rice and cook in plenty of boiling water (about 12 minutes).
Whip the cream.
Juice the lemon.
Peel and de-pith the oranges and cut small. (Reserve a few for garnish.)
Remove rind and centre and cut the pinapple into small pieces. (Reserve some for garnish).

Cooking


Add the sugar to the cream and whip until reasonably firm, then add the lemon juice and the fruit pieces.
Mix carefully with the cooked rice.
Rinse a large bowl with water, then fill it with the rice-cream mixture, press cautiously to remove any trapped air, and leave it for at least one hour in the refrigerator.
Remove the bowl from the refrigerator and turn out the rice-cream mixture on to a round dish.
Garnish with thin slices of orange and/or pinapple.

To serve

Serve chilled with Orange Syrup Sauce.
