Lion Stew

Country of origin: Sierra Leone Otherwise known as Palava Sauce or Trouble Sauce, similar dishes may be found in a number of West African countries including Ghana and Nigeria.
A rich mixture of spinach and fish in a bright sauce. Serves 4

Ingredients

2 large cooking onions
4 large tomatoes
3 red hot chili peppers
250 gm thick cut cooked ham
1 tuna steak
250 gm frozen prawns
750 gm frozen spinach
15 ml sunflower oil
30 ml FAIRTRADE turmeric
100 gm pumpkin seeds

Method

Preparation


Thaw the prawns with hot water.
Thaw the spinach if using frozen.
Grind the pumpkin seeds in a coffee grinder.
Skin and chop fine the onions.

Cooking


Heat the oil in a saucepan and fry the onions until golden. Add the tomatoes, pepper to taste and the chillies (hot peppers).
Add the turmeric and simmer cook for 5 minutes.
Add the diced tuna, cooked ham and thawed prawns.
Simmer for 15 minutes.
Add pumpkin seeds and simmer for a further 15 minutes.

To serve


Serve with boiled rice and root vegetables.

Variation


Reduce the chili pepper input as necessary.
Use a can of chopped peeled tomatoes in place of fresh.
Use fresh spinach if available (3 to 4 huge bunches), wash and chop removing the stems.
