Jamaican Baked Bananas

Jamaican obviously. Delightful baked bananas in a clear, set, orange glaze. Sweet and delicious. This recipe was used when the children were little.
And lots of FAIRTRADE content.

Ingredients

4 to 6 FAIRTRADE bananas
30 ml margarine.
30 ml FAIRTRADE sugar
250 ml FAIRTRADE orange juice
30 ml cornstarch
75 ml (cold) FAIRTRADE orange juice
100 gm FAIRTRADE raisins and / or sultanas or mixed fruit
Fair Trade dessicated coconut
FAIRTRADE Sources
Raisins or Sultanas
Bananas
Dessicated Coconut
Orange Juice
Sugar

Method

Preheat oven at Gas Mark 5 (350 degrees F).
Peel and arrange bananas in an oven proof casserole dish.
In saucepan combine margarine, sugar, and 250 ml orange juice.
Cook and stir for about one minute over a medium heat.
Then combine the cornstarch and 75 ml orange juice and add to the hot mixture and cook until clear and thickened.
If desired, add the raisins or sultanas.
Pour over the bananas.
Cover the top with a thin layer of grated coconut.
Bake for 25 to 30 minutes at Gas Mark 5.

To serve

Serve warm with custard in winter, ice cream in summer, ice cream and cream for high days and holidays.

Try Fairtrade Tropical Fruit Juice for an alternative flavour.
