Method
Preparation
Soak the beans overnight in plenty of cold water.
Skin and chop the onion.
Wash the rice in cold water to remove excess starch.
Cooking
Drain the beans and cook in the usual way (60 to 90 minutes).
Stir fry the onions with the paprika and bay leaves until golden brown.
Add 400 ml water, a little salt and pepper and the parsley.
Bring to the boil and then reduce heat to a simmer.
Simmer covered for about 25 minutes until all of the water is absorbed and the rice is cooked.
The cooked beans should be added hot half way through cooking the rice.
Once cooked, remove from the heat and allow to stand for 5 minutes before serving.
To serve
Turn into a serving dish and serve with chicken.
Variation
Different beans can be used.
