Method
Preparation
Dice the beef large - 4 or 5 cm square.
Skin and trim the onions and dice large.
Skin and chop fine the garlic.
Peel the potatoes.
In a large, heavy oven proof pan, roll the beef in the paprika.
Add a little cooking oil and the onions and garlic and roll them around to coat as well.
Cooking
Brown the meat.
Either on top of the stove, use a low flame and gently stir fry.
Or pop the pan in the oven at Gas Mark 3, uncovered for 10 minutes or so until the meat browns.
Once brown, cover with stock and on top of the stove bring up to a boil.
Reduce to a simmer.
As the fats rise to the surface, skim them off with a spoon.
After 1 hour add the potatoes.
Continue to simmer until the meat is fork tender.
Assembly
This meal is re-heatable.
If allowed to cool, the fat coagulates and can be skimmed off.
Keep the fat (complete with paprika colour) for use elsewhere,
it has both colour and flavour.
To serve
Serve with noodles or dumplings.
Open a bottle of FAIRTRADE red wine.
The strong flavours will take even a red zinfandel.
