Honey Cake

A simple cake flavoured with your favourite FAIRTRADE honey.
This is an English dessert.

Ingredients

1 FAIRTRADE Lemon (optional)
500 gm plain white flour
15 ml (3 tsp) baking powder
15 ml (3 tsp) sodium bicarbonate
5 ml FAIRTRADE ground cinnamon
5 ml FAIRTRADE ground ginger
200 gm FAIRTRADE raw cane sugar
2 hens eggs
250 gm baking margarine
300 ml FAIRTRADE honey
300 ml semi-skimmed milk

Method

Prepare the batter

Pre-heat the oven to Gas Mark 5.
Line and grease a large (22cm) cake tin.
Mix the flour, sugar, spices, baking powder and sodium bicarbonate in a large bowl.

Melt the margarine over a gentle heat in a saucepan and stir in the honey.
Beat the eggs in a cup and add to the margarine / honey mixture.
Allow the mixture to cool a little (5 mins).
Make a "well" in the flour and gradually beat in the margarine.
Keep whisking until a smooth mixture is achieved, use a food mixer if you wish to.
Pour the batter into the lined tin.

Cooking

Bake in the middle of the oven for 75 minutes.

To serve

Allow to cool before slicing.

Variations

Add the juice of a lemon to the batter before mixing, for a sharper flavour.
