Fruit and Nut Balls

Nuts and dried fruit in a coconut covered sphere.
This is an English recipe.

Ingredients

50 ml FAIRTRADE runny honey
250 gm FAIRTRADE
dried fruit mix:
  • Apricots
  • Sultanas
  • Raisins
  • Dates
  • Pineapple
  • Mango
100 gm FAIRTRADE
mixed nuts
  • Cashew
  • Brazils
  • Almonds
  • Walnuts
100 gm dessicated coconut
100 gm icing sugar

Brazil Nuts
Walnuts
Dessicated Coconut
Dried Apricots
Dried Mango
Dried Pineapple
Raisins
Sultanas
Dates
Sugar

Method

Preparation

Nuts and fruit need to be cut to the size of half of a pea or smaller.
For apricots, use scissors.
For other fruit use a herb knife.
For walnuts and cashews, crush gently using a rolling pin.
For brazils and almonds, use a sharp kitchen chopper.

Assembly

Mix the chopped fruit and nut together in a mixing bowl (not coconut).
Stir in the honey.
Mould into balls smaller than a squash ball but larger than a marble.
Roll each ball in the coconut.
Then roll each ball in the icing sugar.

Variations

Try additional orange peel.
Toast the nuts until golden
Dip each ball coconutty ball in molten Darkly Divine chocolate.
