Five Spicy Rice

Five Spice is used to make the flavour of the rice more interesting.
Whilst this recipe is ascribed to Thailand , it is representative of rice dishes in the region, particularly China.

Ingredients

250 gm FAIRTRADE long grain brown rice
10 ml toasted sesame seed oil
5 ml grated root ginger
1 clove garlic - skinned and chopped
5 ml five spice powder
250 ml water
100 ml FAIRTRADE white wine

Method

Wash and drain the rice.
In a saucepan, warm the oil and stir-fry the garlic, ginger and five-spice powder for about 1 minute.
Add the drained rice and salt and stir fry for about 1 minute until fairly hot.
Add the wine which should boil through straight away.
Add the water, bring gently to the boil, and then simmer covered for about 30 to 40 minutes until all of the liquid is absorbed.
Add a few drops of say sauce and turn into a serving dish.

To serve

Serve as an accompaniment to dal, curry, etc.
