Fiji Ginger Fish

A ginger flavoured Fijian fish dish.
Quantities serve 6.

Ingredients

1.5 kg white fish (Cod, Snapper, grouper)
1 FAIRTRADE Lemon
30 ml sunflower oil
50 ml dark soy sauce
50 ml Equal Exchange Fair Trade Palestinian olive oil
150 ml FAIRTRADE white wine
3 cloves garlic
2 cm ginger root
10 ml FAIRTRADE demerara sugar

Method

Preparation


Peel and grate the ginger.
Peel the garlic.
Wash and pat dry the fish, and remove any bones.
Cut into serving portions and place in a marinating bowl.
Juice the lemon in a lemon squeezer and pour over the fish.
Ensure the fish is well coated with juice, and leave to marinate for at least 1 hour (in the fridge).
Mix the soy sauce with the olive oil, wine, garlic, sugar and ginger in a blender.

Cooking


Place the marinated fish in a shallow baking dish.
Pour over the soy mix.
Bake for 30 to 45 minutes at Gas Mark 4 basting frequently.

To serve

Serve with he rest of the FAIRTRADE white wine.
Accompany with vegetables in season or a rice dish.

Variation

You could vary the type of wine you use.
For a change, use limes instead of the lemon.
