Dipping Sauce

A sweet sharp sauce for dipping finger food.
This is a simple Greek recipe.

Ingredients

1	FAIRTRADE lemon
to taste	FAIRTRADE freshly ground black pepper
to taste	salt
50 ml	FAIRTRADE red wine
50 ml	vegetable stock
50 ml	tomato puree
50 gm	FAIRTRADE sugar
FAIRTRADE	Sources Fresh food Lemons Wine Herbs and Spices

Method

Preparation

Juice the lemon, discarding the skin and pith.

Cooking

Measure the wine, stock, sugar and tomato puree into a saucepan,
add the lemon juice,
and heat gently to a simmer.
Adjust the seasoning to your taste.
Allow to cool

To serve

Serve cool.
