Deruny

Ukranian potato pancakes fried in oil.
The Deruny is related to the German Rosti, a rosti is a simple pancake made of shredded potato and fried in butter.
Excellent, filling, warming food.

Ingredients

1,000 gm	FAIRTRADE Potatoes
15 ml	sunflower oil
2	hens eggs
	salt and fresh ground FAIRTRADE black pepper
FAIRTRADE	Sources Fresh food Herbs and Spices

Method

Preparation

Peel the potatoes, and shred them using the coarse side of a grater.

Cooking

Pat the shreddings dry and mix them with the eggs and the salt and pepper.
Heat the oil in a medium sized (non-stick) frying pan.
Add potato mixture patting it down to form a thinnish, flat cake.
Fry first side until golden brown, and then slide out onto a plate.
Turn the half cooked Deruny upside down onto another plate, (or if brave, flip in the air).
Cook the second side until golden brown.

To serve

Slide onto a serving plate and cut into wedges.
Serve with sour cream or thick yoghurt.
