Cranachan

A simple, authentic Scottish dessert.
Quantities are for four.

Ingredients

300 ml double cream
200 gm raspberries
to garnish strawberries
30 ml FAIRTRADE honey
30 ml best whiskey
30 ml oatmeal
FAIRTRADE Sources

Honey

Method

Preparation

Pick over and wash the fresh fruit as necessary.

Cooking

Cook the oatmeal in a non-stick, dry pan over a low to medium heat until the oats are golden brown.
Whip the double cream until it holds a stiff peak.

Assembly

Place a few raspberries in the bottom of each of four glasses.
Mix the remaining raspberries, the whiskey, and the honey in with the cream.
Refridgerate for 30 minutes to stiffen the mixture a little.
Turn the mixture out into the glasses and garnish with the toasted oats and a strawberry or two.

To serve

Serve chilled.

Variations

Fresh forest fruits should be varied according to what is available.
Drambuie can be used in place of the whiskey.
