Chimichurri Sauce

Country of origin: Nicaragua Herbs and garlicky hot spice marinade.
Different versions of this sauce are found in other latin american countries.
Red wine vinegar, fresh hot chilli, garlic, herbs and oil seem to be the common basis.

Ingredients

10 cloves garlic
1 red pepper (jalapeno)
45 ml fresh oregano
100 ml fresh parsley
50 ml red wine vinegar
100 ml FAIRTRADE Brazil Nut Oil
large pinch salt

Method

Preparation

Skin the garlic and crush into a bowl.
De-seed the pepper and chop finely.
Wash and chop the herbs.

Cooking

Put the garlic and herbs into a food blender and "whizz".
Add the vinegar, oil and salt, and process until smooth.

To serve

Use as a marinade for a spicy chicken dish.
Or use as a side dish sauce.

Variation

Olive Oil can be substituted for the Brazil Nut Oil at need.
FAIRTRADE lemons can be used in place of the vinegar for a tarter flavour.
Scotch Bonnets or cooler chilis can be used in place of the jalapenos.
