Chicken Maryland

Ingredients

2 chicken breasts per teenager, one per normal appetite
1 egg beaten (for about 3 chicken breasts) in a dipping dish
100gm Whole meal flour seasoned with salt and freshly ground FAIRTRADE black pepper
100gm Breadcrumbs

Method

Prepare each chicken breast in turn with flour, then dip both sides in the egg, and finally coat both sides with breadcrumbs.
Place on a baking try and roast in a pre-heated oven at Gas Mark 6 for 30 minutes.

To serve

Serve with roasted potatoes, parsnips and a green vegetable.
