Chicken Afghanistan

This recipe starts with a long marination in garlicky yogurt. This makes the chicken tender and moist and adds real flavour.
This is the centrepiece of a Main Course. Servings depend on how you deal out the chicken breasts.

Ingredients

3 cloves garlic
5 ml salt
500 ml natural yogurt
60 ml FAIRTRADE lemon juice
fresh gound FAIRTRADE black pepper
6 chicken breasts

Method

Crush the garic into a bowl and add the salt. Mix.
Add the yogurt, lemon juice and pepper. Mix.
Turn the chicken breasts in the marinade, cover, and place in the refridgerator for a day or so, turn the chicken over a few times.
Grill the breasts for about 10 minutes per side until properly cooked through.
Serve.

To serve

Serve hot with pita bread and fresh yogurt.

Variation

1) The chicken can be oven cooked if grilling is a problem. 25 minutes at Gas Mark 4 is OK. Check the meat is cooked through.
2) Add 5 ml of hot spice (Chilli pepper or piri piri) to the marinade for a spicy hot.
