Chicken Adobo

A simple Chicken or Pork Adobo. This recipe was sent to us by our Fair Trade friends in the village of Salay in Philippines, where they hand make the most beautiful cards. Check out Salay cards.

This is a traditional and simple Filippino national dish. Serves two to four portions.

Ingredients

500 gm chicken or pork
5 cloves garlic
2 bay leaves
50 ml vinegar
00 ml water
5ml Soy Sauce
a little cooking oil
to taste salt and fresh ground FAIRTRADE black pepper

Method

Preparation
Trim fat and bone from the meat and cut into chunks.
Trim the garlic skins.
Mix the garlic with the Soy sauce and vinegar. Marinate the meat in the vinegar mixture for 20 minutes or more.
Cooking
Place the meat and marinade juices in a saucepan and add the water. Warm through, cover the pan, and cook slowly until almost dry.
Check the seasoning and adjust with salt and pepper as necessary.
Separate the meat from the broth from the garlic.
Fry the garlic in a little cooking oil until brown.
Add the meat and brown on all sides.
Add the remaining broth and boil until thick like a gravy.
Assembly
When ready turn out into a shallow serving dish.

To serve

Serve with aromatic FAIRTRADE Rice.

Variation

Add chicken or pork liver as well.
