Cheese and Olives Salad

Greece: use Feta Cheese
Italy: use Fromaggio di Garfangana
England: Blue Stilton.

Ingredients

100 gm cheese of your choice
2 medium tomatoes
a few lettuce leaves
a quarter FAIRTRADE Lemon
8 olives
bread slices
FAIRTRADE Sources
Lemons
Wine
Brazil Nut Oil
Herbs and Spices

Method

Preparation
Wash and shake dry the salad material
Slice the tomatoes.
Cut the chosen cheese into chunks.
Cut the lemons into quarters. Assembly
Place the tomatoes on one side of the plate, and the lettuce leaves on the other.
Assemble the cheese and olives in the middle on top of the salad bed.
Place the lemon segment on the edge of the plate.

To serve

Serve with some slices of fresh bread, red wine vinegar, and FAIRTRADE Brazil Nut oil for drizzling. Offer salt and FAIRTRADE black pepper at the table as well as a bottle of FAIRTRADE white wine.
Meze: Serve a wine to match the strength of the cheese flavour.

Variation

Cheese appropriate to the country you are in.
This recipe will take a good strong cheese.
Olives - choose the best you can get.
