Fair Trade Recipes for a Fairer World

Cheese and sweetcorn salad

Mozzarella cheese and sweetcorn balance out nicely to make a satisfying lunch.
Serves 1. Use fresh Italian cheese if you can get it.

Ingredients

100 gm mozzarella cheese
100 gm frozen sweetcorn
2 medium tomatoes
a few lettuce leaves
a quarter FAIRTRADE lemon
FAIRTRADE Sources
Lemons
Oranges
Wine
Brazil Nut Oil
Herbs and Spices
Olive Oil

Method

Preparation
Wash the tomatoes and lettuce and shake dry.
Slice the tomatoes.
Defrost the sweetcorn.
Assembly
Please the tomatoes and lettuce decoratively on a plate.
Spread the sweetcorn in an oval overlapping the tomatoes and lettuce.
Please the cheese in the middle.
Place the squeezer of FAIRTRADE lemon on the edge of the plate.

To serve

Open a bottle of FAIRTRADE white wine as well (or a red).
Serve with chunks of fresh bread, with wine vinegar, Fair Trade olive oil (FAIRTRADE Brazil Nut Oil on high days and holidays), salt and FAIRTRADE blackpepper on the table.

Variation

A segment of FAIRTRADE orange would not go amiss.
