Ingredients

2 white onions
2 bell peppers, any colour
3 carrots
400 gm can beans
20 ml curry powder
2 small green chili peppers
half teaspoon salt
6 small to medium tomatoes
25 ml sunflower oil
to taste salt
to taste FAIRTRADE freshly ground black pepper

Notes

Quantities are not critical, the recipe is a guide rather than a definition.
Authentically this is a spicy hot dish, quantities suggested would suit a normal european taste bud.

Preparation

Skina and chop the onions.
Remove stalk, pith and seeds from the bell peppers and chop.
Grate the carrots.
Remove the seeds and slice the peppers finely.

Cooking

Fry the onions and bell peppers over medium heat for 5 to 10 minutes until starting to turn translucent.
Add the grated carrots, tomatoes, chili and beans and cook gently for 15 minutes.
Add hot spices and simmer for another 15 mins.

To serve

Serve hot.
