Celebration Rice

This is an Indian dish.
Quantities are for 4 to 6 generous portions.

Ingredients

200 gm FAIRTRADE brown rice
100 gm FAIRTRADE raisins
100 gm FAIRTRADE mixed nuts
a piece of FAIRTRADE Cinnamon stick
3 to 6 FAIRTRADE whole cloves
5 green cardomom pods
100 ml FAIRTRADE Orange Juice
FAIRTRADE Sources
Cashew Nuts
Brazil Nuts
Walnuts
Raisins
Sultanas
Rice
Herbs and Spices
Crafts

Method

Preparation
Chop the nuts and mix the nuts and fruit in a bowl. Cover with the orange juice.
Allow to stand whilst the rice is cooking.
Wash the rice gently in running cold water.
Cooking
Boil a good pan of water and add therice. Bring back to the boil and cook over a medium heat for 25 minutes or so until the rice is soft to the palate.
Whilst the rice is cooking, assemble the spices, and towards the end of the rice cooking stir fry the spices in a little oil or margarine.
Add the fruity nuts together with juices to the fried spices and simmer for a minute or so.
Rinse the cooked rice (if necessary) with boiling water and turn out into a mixing bowl.
Assembly
Add the fruit and nuts to the rice and turn well.
To serve
Serve hot.
Variation
USe FAIRTRADE nuts. brazils. cashews, or non-FAIRTRADE nuts such as pecans or almonds.
Use either a whole cinnamon stick broken up, or 5 ml of ground cinnamon.
As per your choice, use either whole cardamom pods, or open the pods to obtain the seeds, and crush using a pestle and mortar.
