Method
Preparation
Peel the pineapple and remove the core. Chop small.
Peel the yam and dice.
Rinse the quinoa.
Cooking
Steam or microwave the yam for 5 minutes.
In a saucepan mix the tropical juice and the water and bring to the boil.
Add the quinoa, pineapple, yam and the spices. Reheat and then turn down to a simmer.
After 10 minutes add the raisins.
Simmer for a further 10 to 20 minutes until all of the juice has been absorbed and the endosprem has uncurled.
To serve
Serve hot.
Variation
Use a tin of chopped pineapple if no fresh pineapple is available, (and use the liquid as well).
Use sweet potato if yam is not available.
