Caribbean Quinoa

Country of origin: Cuba
Vibrant fruit and nutty quinoa with aromatic spices.

Ingredients

200 gm FAIRTRADE Quinoa
200 ml FAIRTRADE tropical juice
200 ml water
2 slices FAIRTRADE pineapple
10 ml FAIRTRADE ground cinnamon
5 ml FAIRTRADE groung nutmeg
large pinch salt
1 medium (250 gm) yam
100 gm FAIRTRADE raisins

Method

Preparation
Peel the pineapple and remove the core. Chop small.
Peel the yam and dice.
Rinse the quinoa.
Cooking
Steam or microwave the yam for 5 minutes.
In a saucepan mix the tropical juice and the water and bring to the boil.
Add the quinoa, pineapple, yam and the spices. Reheat and then turn down to a simmer. After 10 minutes add the raisins.
Simmer for a further 10 to 20 minutes until all of the juice has been absorbed and the endosprem has uncurled.

To serve

Serve hot.

Variation

Use a tin of chopped pineapple if no fresh pineapple is available, (and use the liquid as well).
Use sweet potato if yam is not available.
