Canadian Beef Stew

A long slow oven baked stew from Canada.
The vegetables can be varied according to what is available.
Quantities are for four.

Ingredients

1 kg stewing beef
500 gm carrots
500 gm potatoes
4 small onions
2 ribs celery
1 large tin chopped tomatoes
30 ml tapioca
15 ml FAIRTRADE Raw Cane Sugar
FAIRTRADE Sources

Sugar

Method

Preparation
Meat and Veg.
Trim the fat off the meat and cut into large cubes.
Peel the onions, potatoes and carrots and wash the celery.
Cut the vegetables into 2 cm pieces except the onions which should be left whole.
Juices
Mix the tapioca, and sugar into the chopped tomatoes, and season with salt and pepper to taste.
Cooking
Place the prepared meat and veg in a large oven proof pot.
Pour the juices mixture over the meat and veg, and mix well.
Cover, and bake for 5 hours at Gas Mark 1.

To serve

Serve with doorsteps of Rye Bread.
