Bread and Oil

Country of origin: Italy

The simplest starter going.
Use bread that is not too crumbly. A selection of dark rye, seedy donker, and a light granary would be great.

Method

Preparation
Set the table.
Put the oil, lemons, bread, salt and pepper out.

To serve

Every person has a plate.
Each person pours a little oil onto the plate, garnishes with salt, pepper lemon juice according to taste.
Each person dips bread and eats.

Variation

Put a teaspoon of Za'atar herb and spice mix beside the oil, and dip the oily bread into the Za'atar.
Definitely some wine goes well.
A few Zaytoun FAIRTRADE olives.
A few small chunks of feta cheese.

Greek Meze Variation

Provide each person with a small bowl, and serve as above with the addition of balsamic vinegar.
A little vinegar and oil is poured into the bowl, and the bread is dipped through the oil into the sweet tartness of the balsamic vinegar.
Meze: Serve with Retsina, or a sharp FAIRTRADE white.
