Beef Soup

West African (Sierra Leone) soup modified for English taste buds.
Serves 4 as a main course.

Ingredients

800 gm stewing beef
2 medium onions
6 aubergines
25 ml tomato paste
1.5 Litres water
4 medium tomatoes
5 ml piri piri
to taste salt

Method

Cooking
Trim off any fat / gristle and wash the meat. Cut into "cubes".
Heat the water to boiling in a pot and add the meat with the piri piri and a large pinch of salt.
Reduce the heat and simmer for 30 minutes.
Skin and chop the onions. Clean and chop the aubergines.
Slice the tomatoes.
Add the aubergines, onions and tomatoes to the pot and simmer until they are cooked (about 20 minutes).
Remove the vegetables, blend them in a food mixer and return them to the pot.
Add the tomato puree, mix well and allow to simmer for another 30 minutes or until the meat is tender.

To serve

Serve with potatoes, carrots and a green vegetable such as spinach.
Authentically the vegetables would be cassava, yam and sweet potatoes.

Variation

The meat can be varied to what is at the market.
Adjust the hot spice to your taste.
