Fairtrade Banana Bread

The best possible use for very ripe bananas (apart from making wine which takes a lot longer).
We think Costa Rica is the home of Banana Bread.
FAIRTRADE bananas are widely available in UK.

Ingredients

5 FAIRTRADE ripe (spotty) bananas
200 gm FAIRTRADE caster sugar
150 gm butter
2 hens eggs
50 ml natural yoghurt
225 gm plain flour
5 ml baking soda
50 gm each chopped
FAIRTRADE walnuts,
FAIRTRADE cashew nuts,
FAIRTRADE brazil nuts
generous splash FAIRTRADE rum
FAIRTRADE Sources
Bananas
Nuts
Sugar
Rum

Method

Preheat the oven to Gas Mark 4.
Mix together into a smooth paste the butter and the sugar.
Mash in the bananas.
Mix in the remaining ingredients.
Pour into a greased bread tin.
Bake for 90 minutes.
NB. Even if a testing needle comes out clean, give the loaf the full 90 minutes.

To serve

Serve cool, in slices with butter.

Variation

Vary the nuts according to what is in hand.
