Method
Let the boiled water cool until lukewarm.
Mix butter, shortening, coconut, oats, sugar, flour, baking powder, baking soda and salt
using your fingers until dough reaches the consistency of pie crust.
Add the lukewarm water and work into the dough.
Roll the dough into 2 cm balls, and flatten with a fork or press.
Place on a greased baking tray and bake at Gas Mark 6 for 10 minutes.
To serve
Serve with FAIRTRADE coffee.
Variation
Add a handful of FAIRTRADE raisins or FAIRTRADE sultanas to the dough.
