Anzac Biscuits

Country of origin: Australia - A nice sweet crunchy cookie.

Ingredients

Dry Ingredients
200 gm rolled oats
200 gm Fair Trade flaked coconut
200 gm FAIRTRADE demerara sugar
200 gm plain flour
5 ml bicarbonate of soda
Runny Ingredients
120 gm butter
15 ml boiling water
30 ml FAIRTRADE honey
FAIRTRADE Sources
Dessicated Coconut
Honey
Sugar

Method

Preparation
Mix together the dry ingredients in a nice big bowl.
Grease two oven trays.
In a saucepan, slowly melt together the butter, the boiling water and the honey.
Once it is all running together nicely add 1 level teaspoon bicarbonate of soda. When it froths up, pour it over the dry ingredients and mix thoroughly.
Take one tablespoon of the mixture at a time and roll into a ball in the palms of your (clean) hands. Then place on the baking tray and flatten out until cookie thickness. This recipe should make about 20.
Cooking
Bake in a moderate oven (150C / Gas mark 2 or 3).
Keep an eye on the biscuits as they can start to burn quickly, they should cook for about 15-20 minutes.

To serve

Let them cool completely on the tray before lifting them off.
