American Style Pancakes

These pancakes demand respect even from hungry teenagers.
A good heavy frying pan is recommended.
This is an ancient (for America ) Moosewood recipe somewhat modified.

Ingredients

225 gm plain cottage cheese
1 FAIRTRADE apple cored and grated
15ml FAIRTRADE runny honey
75g plain flour
30gm wholemeal flour
1 FAIRTRADE lime
15ml sunflower seeds
5ml FAIRTRADE ground cinnamon
half FAIRTRADE nutmeg, grated
4 eggs separated whites from yolks
2.5 ml salt
FAIRTRADE Sources
Apples
Lemons
Oranges
Honey
Spices
Sugar
Juice

Method

Juice the lime, discarding the skin and pith.
Mix all ingredients except the egg whites.
Beat the whites until stiff and fold into the pancake mix.
Fry on both sides until brown

To serve

Serve with FAIRTRADE lemons for squeezing,
or FAIRTRADE orange juice
(or Church family side - FAIRTRADE orange quarters for squeezing),
plus FAIRTRADE sugar
and FAIRTRADE honey.
