Aduki Beans (a.k.a. Adzuki Beans)

Basic instructions for cooking aduki beans.
This ingredient is believed to be of Japanese origin.

Ingredients

50 gm dry weight per person Suma Fair Trade Aduki Beans
lots water

Method

Preparation
Put the beans in the bottom of a bowl and cover well with cold water.
Allow the beans to soak overnight.
Strain off the soaking water and put the beans in a saucepan.
Add fresh cold water to cover the beans to a depth of 5 cm.
Cooking
Bring the water to a boil, and skim off any scum that forms.
Cover the pan, and then turn down to a simmer.
Simmer for 60 to 90 minutes testing a bean every 10 minutes or so after the 60 minue mark.
The beans are cooked when the test beans are soft.
Strain off the water in a colander and wash either under cold runnng water or with fresh boiled water.
